Delicious Sweet Potatoes Recipes You'll Want to TryFebruary is National Sweet Potato Month. It’s a great time to introduce your family to this delicious and nutritious vegetable. If you have picky eaters, this might be one vegetable they’ll actually eat.

Sweet potatoes are very flavorful and sweet enough on their own that you won’t need to add other ingredients to get your family to eat them.

My son loves sweet potatoes. I still laugh at the memory of his face the first time he tried them at 7 months old; it was priceless. Two seconds later he decided he loved them. From that moment on he would cry when I ran out of sweet potatoes. It didn’t matter how much I made; he just loved them so much. He’s almost a year and a half now and he still loves them. I don’t need to hide them under cheese, like I do with broccoli, or anything else to get him to eat them either.

I love that sweet potatoes are packed with nutrients such as vitamin A and beta carotene. Vitamin A promotes eye and skin health and also protects against infections. Beta carotene has been shown to help in the prevention of specific types of cancer such as lung cancer. Sweet potatoes also have other important nutrients including vitamin C, potassium and fiber.

These health benefits are all great reasons to add sweet potatoes to your regular menu. Make sure when you’re shopping at the commissary to look for ones that are firm, deep orange and not discolored and when you get home, store them in a cool, dry and well-ventilated area. Also make sure that you choose the right kind of sweet potato for the recipe you plan to use.

Did you know all sweet potatoes aren’t the same? In fact, sweet potatoes aren’t potatoes at all. They come from a completely different family of plants. While sweet potatoes and yams look similar, they too are not related. To make things more confusing, many grocery stores in America market sweet potatoes as yams. How can you tell the difference?

Yams have a cylindrical shape with blackish or brown, bark-like skin and white, purple or reddish flesh. Sweet potato skin color can range from white and yellow to red, purple and brown, while the flesh can be white, yellow, orange or even orange-red. These vegetables have an elongated shape with tapered ends.

There are 2 main types of sweet potatoes in America: Firm ones have golden skin and a paler flesh than soft sweet potatoes, which have copper skin and orange flesh. They cook differently as well. Firm sweet potatoes will remain firm after cooking and a bit waxy while soft sweet potatoes will become creamy, fluffy and moist. Soft sweet potatoes are often labeled as yams and they are the ones Americans typically use at holiday dinners for casseroles, baked sweet potatoes, sweet potato pies and more. Make sure you check with your recipe to see which type of sweet potato you need before you shop.

Of course you can always just poke some holes in a scrubbed sweet potato and pop it in the  microwave on high for 8 to 10 minutes and enjoy the simplicity of the vegetable. That is how I usually serve them at home; no fancy recipe needed. If you really want to get your children excited about dinner, let them drizzle some maple syrup on their baked sweet potato or add a dash of cinnamon. Sweet potatoes reheat pretty well, so if they don’t love them tonight, add them to a new recipe and try again tomorrow.

Warm Up with Super Soups for the Winter

As the weather drops, we look for ways to heat us up. Whether we bundle up in a cozy sweater or wrap ourselves with a soft scarf, there are tons of ways to keep warm in the winter. My absolute favorite way to warm up is from the inside with a tasty soup.

Soups are wonderful because they are so versatile. Every cuisine has different soups that are special from one another and offer a completely different taste. It’s also very easy to put together. The broth allows for all the ingredients to mix together and create an awesome flavor. The best part is you can add or take away anything that doesn’t appeal to you or your family.

A lot of soup recipes call for a mirepoix (aka the soup trifecta), which is sauteed onion, celery and carrots. Cooked together in butter, it releases a wonderful aroma. Traditional chicken noodle soup uses a mirepoix and so does my all-time go-to soup recipe. Instead of using plain noodles, I opt for cheese-filled tortellini.

Warm Up with Super Soups for the Winter

Tortellini Soup

  • 1 tablespoon butter
  • 2 garlic cloves
  • 1 tablespoon dried parsley
  • 1 celery stalk, chopped
  • 2 medium carrots
  • 1 small yellow onion, chopped
  • 1 carton chicken broth (32 oz)
  • 2 cups water
  • 1 package dried cheese tortellini
  • salt/pepper to taste
  • grated Parmesan cheese

Heat large pot on medium-low heat. Add butter, garlic, onion, celery, carrots and cook for about 10 minutes. Add broth, water and dried parsley to boil, then reduce heat. Add tortellini and cover to simmer for about 10 minutes, until tortellini is cooked.

Serve in a bowl and top off with grated Parmesan cheese. I like to add a side of garlic bread. Jazz it up more by adding cooked chicken with the tortellini and cook for a couple of minutes more.

A more hearty soup is good ol’ Beef Stew. Cook through cubed beef in a couple tablespoons of cooking oil in a large pot. Mix together 4 cubes of beef bouillon, broken up and 4 cups of water in a separate container. After everything is dissolved, transfer it to the large pot. Then add, 1 teaspoon of dried rosemary, 1 teaspoon of dried parsley and ½ teaspoon of black pepper. Bring to a boil and simmer for an hour (allowing the meat to tenderize). Then, stir in 3 potatoes, 4 celery stalks, 4 carrots (all chopped to 1 inch pieces) and 1 large onion chopped. Separately, dissolve 2 teaspoons of cornstarch in 2 teaspoons of cold water and pour into stew. Cover and simmer for another hour.

For a more south-of-the-border flavor, Ground Beef Taco Soup would be ideal. It’s an easy recipe that requires you to throw a bunch of ingredients in a pot. First, you need to cook 1 pound of ground beef. Then, add 1 taco seasoning packet, 1 can kidney beans undrained, 1 can corn drained and 1 cup of water.

I like to add a can of diced tomatoes in my taco soup and make a cheese quesadilla to serve with it. Top off your soup with some cheese and dollop of sour cream. Yum!

  8. Breakfast for Dinner. My husband LOVES his western omelet, no matter the time of day. Why not have a celebratory dinner that reflects his favorite breakfast meal? My man is also a fan of French toast, so I’d put together a nice egg and French toast dinner.
  9. Chicken Noodle Soup and Grilled Cheese Sandwiches. Chicken noodle soup would be a perfect dish especially for the cool evenings. All you really need is chicken broth, celery, onions, carrots and chicken.
  10. Tacos. The spice section can help you with seasoning protein for a delicious South-of-the-Border meal. Pick up your favorite toppings like cheese, salsa or whatever else your taste buds desire.

Eldorado Casserole

Eldorado Casserole is where cheese, ground beef, and Doritos® blend together in perfect casserole harmony. I make a lot of chicken enchiladas, tortilla soup, and chicken tacos in my house. Many times I crave that spicy Southwest flavor, but don’t want to take the time to assemble a batch of enchiladas.

Walking Tacos

Brown 1 pound of hamburger before adding the taco seasoning as instructed on the package. I brown the meat ahead of time and keep it warm in a small crock pot. Then when the kids start yelling for lunch, I hand them a small bag of Doritos which they immediately open. The kids put a scoop of meat, chopped lettuce and chopped tomatoes in their bag.

Close the bag. Shake it up. Hand out forks. Dinner is done.

Mexican Chicken Meal

Doritos are not doomed to the bottom layer of the casserole dish. If you want crunch at dinner, try this Mexican Chicken Meal. In this recipe, the chips are crumbled and placed on top minutes before eating. Once the top layer of chips is spread over the chicken, bake the Mexican Chicken Meal for an additional 2 minutes. Set a timer. Nobody likes the smell of burnt Doritos®.

All American Taco Salad

As the temperatures start to rise, I won’t turn on my oven. I won’t. Instead I take leftover ground beef and reintroduce it to my family as the main ingredient in this All American Taco Salad. Leftovers taste better transformed into a new main dish for dinner. I couldn’t agree more.

One slight modification to the recipes listed here: I buy block cheese when it’s on sale and then I sweetly ask my husband to shred it and put it in 1-pound freezer bags to use later. It is the same convenience of the bagged shredded cheese. But with his help, we can save money and it tastes better.
