The Right Way to Select Ripe Produce

Use this guide to select ripe, not rotten, produce.

Choose fruits that are free of flaws and firm.

Choosing perfectly ripe produce can feel like a game of Russian Roulette. There’s nothing like picking up a beautiful looking watermelon to find it mealy inside when you cut into it.

One of the main things to remember when handling produce is to be gentle. If you bruise it, you buy it! I’m kidding. That would be a horrible practice.

A good rule of thumb when selecting produce is to check the surface of the fruit or vegetable for flaws, gently squeeze and use your nose to guide you.

Avocados should have a darker skin and should be soft– but not too soft– when you gently squeeze them. If they’re too hard, you can always speed up the ripening process by putting them in a paper bag for a day or two. On the other hand, you can keep them from ripening too fast by placing them in the refrigerator.

If you’re shopping at a farmers’ market, don’t be afraid to ask for a sample.

Berries can be tricky, especially during the summer months. Mold is the thing to watch for when choosing berries, especially raspberries or blackberries, which are more delicate. Use your nose to detect unseen mold and try to buy berries in paper containers during peak season.

Cantaloupes and other melons should have a scent to them. If you push along the end opposite where the stem or vine was, you should be able to tell what type of melon it is by its scent. Watermelons are a bit different though, as they don’t have a scent. Look for ones that are heavy and avoid flat sides.

Citrus fruits that are too hard will probably not be juicy. Look for ones that are heavy and have a bit of give to them when you squeeze them.

Tomatoes should be brightly colored and firm. Storing them at room temperature keeps the flavors from going bland.

Peppers should have a smooth skin and be firm. They should not feel rubbery if you squeeze them gently.

Wrinkles and sprouts are signs of a bad potato. If you can, buy potatoes individually instead of prepackaged, so you know what you’re getting. Store in a cool, dark place.

Zucchini should be firm and smooth. You can tell how fresh or not, a zucchini or summer squash is by examining the tip. Don’t buy them if they’re squishy or dry.

If you’re shopping at a farmers’ market, don’t be afraid to ask for a sample. Many farmers are willing to let you taste before you buy. If you’re at the grocery store, seek out an employee or the produce manager if you have questions or print off this handy guide from Martha Stewart.

What side dishes do you bring to a neighborhood barbecue?

May is National Barbecue Month and many of us are starting to dust off our grills. Our ovens will soon go into hibernation for the summer and our forks will stay in the utensil drawer as we reach for finger food until the sun goes down.

Barbecue is a social eating experience best enjoyed in the outdoors. That’s why cul-de-sac after cul-de-sac at military housing areas around the world will begin the summer barbecue season with a potluck on Memorial Day weekend.

I personally love eating outdoors surrounded by my friends. But I often fret about which side dish or dessert to bring to the neighborhood barbecue. I want to bring a dish that is familiar to my friends, but not boring. I aim for food that people will eat so I don’t have any leftovers. Finally, I am thrilled when a fellow military spouse asks for my recipe. Her request is the highest form of flattery for this amateur cook.

Here are 6 super simple side dishes that you can take to your next neighborhood barbecue.

Bacon Ranch Potato Salad

Potato salad can be tricky. I once had a neighbor who tried to make a healthy potato salad. It was a disaster because the words “healthy” or “light” are not intended to accompany potato salad. A delicious potato salad has tender red potatoes that aren’t mushy. Mushy potatoes turn potato salad into potato soup. Try this Bacon Ranch Potato Salad for a flavorful side dish.

Citrus Cole Slaw

The barbecue side dish counterpart to potato salad is coleslaw. People often prefer one over the other. Coleslaw by definition is chopped raw cabbage moistened with mayonnaise. That’s your starting point for coleslaw. Recipes, like this Citrus Cole Slaw, surprise your taste buds with subtle orange juice sweetness.

Eldorado Casserole

Close the bag. Shake it up. Hand out forks. Dinner is done.

Mexican Chicken Meal

Doritos are not doomed to the bottom layer of the casserole dish. If you want crunch at dinner, try this Mexican Chicken Meal. In this recipe, the chips are crumbled and placed on top minutes before eating. Once the top layer of chips is spread over the chicken, bake the Mexican Chicken Meal for an additional 2 minutes. Set a timer. Nobody likes the smell of burnt Doritos®.

All American Taco Salad

As the temperatures start to rise, I won’t turn on my oven. I won’t. Instead I take leftover ground beef and reintroduce it to my family as the main ingredient in this All American Taco Salad. Leftovers taste better transformed into a new main dish for dinner. I couldn’t agree more.

One slight modification to the recipes listed here: I buy block cheese when it’s on sale and then I sweetly ask my husband to shred it and put it in 1-pound freezer bags to use later. It is the same convenience of the bagged shredded cheese. But with his help, we can save money and it tastes better.

Commissary Specials Answer the Question: What’s for Dinner?

3426318832_9456852540_z(1)At least once a week, the majority of military spouses are shopping for groceries at our military commissary. We are the ones who do most of the cooking. We are the ones facing the daily question: What’s for dinner?

The answer is found in the weekly commissary specials.

It’s hard to figure out what to make for dinner every night. Meal planning is best and can save money when you plan meals based on what’s on sale.

Slow cooker meals can be very easy and convenient to make, especially with our busy lives. The hardest part is to remember to turn it on at the right time. Start it too early and dinner will be done in the middle of the afternoon. Start it too late and you will be ordering pizza for dinner. I admit I have done that a time or two.

For a savory slow cooker dinner, I like to take a chicken breast, add water or chicken broth and some spices. I might do something simple like salt or pepper. You can also add in some convenient slow cooker sauces for flavor. There is a lot you can do to create different meals.

I also like making deli sandwiches at home. They taste great and you can customize them the way that you want. Plus they are a lot cheaper than buying them from a store or eating out. Studies show that families on average spend less than $2 a day packing a sandwich for lunch. It is a good idea to have two types of deli meat in your refrigerator. Add cheese, veggies, and your favorite sauce or dressing and you are good to go.

Making your own desserts is a lot cheaper than buying them baked and packaged at the grocery store. You just need a little time to prepare. Cake and brownie mixes (where you only need to add oil, water, eggs, or butter) are basically foolproof.

I like to stock my pantry with cake and brownie mixes and have them on hand. Then I am ready to bring a yummy dessert to an FRG meeting, Bunco social, or a neighborhood barbecue on a moment’s notice.

FRITOS® Chili Pie In A Scoop!

Any red-blooded American will tell you that Superbowl Sunday is about three things: football, family, and, last but definitely not least, snacks- it’s no coincidence that “football” and “Frito-pie” both start with the letter “F”  No Superbowl Party is complete without a stellar snack spread, and you definitely don’t want to miss having this awesome bite-sized spin on the classic FRITOS® Chili Pie using FRITOS® SCOOPS!®!

FRITOS® Bite Sized Chili Pie Recipe

Shopping List

1 large bag of FRITOS® SCOOPS!®
1 15-ounce can of chili with beef (with or without beans), heated
1 8-ounce bag of shredded cheese

Optional Toppings:

Tomatoes
Onions
Jalapeños
Guacamole
Sour Cream

Instructions:

1.  Pre-heat your oven to 350 degrees.

2.  On a baking sheet, place individual SCOOPS! in rows like little bowls.

3.  Heat chili and place a spoonful of chili in each SCOOPS!.

4. Garnish each bite-sized Chili Pie SCOOPS! with ingredients like onion, tomato, and jalapeño as desired.

5. Sprinkle cheese all over and pop into the oven at 350 degrees till the cheese is a little melted.

6.  Optional: Top each Frito Pie Scoop with a dollop of guacamole and/or sour cream

Serve and enjoy!
