Campfire Beef

Recipe: 1 package stir fry/stew beef 3-4 carrots 3 medium potatoes 2-3 cans stewed tomatoes, italian style parsley garlic cloves or garlic salt/powder oregano 9x13 casserole dish Reynolds aluminum bags, large or just aluminum foil (use to make a bag for ingredients) 2 cups rice (optional - serve campfire beef over, if desired) Preheat oven to 400 degrees. Place aluminum foil bag in 9x13 dish. Mix all ingredients together in foil bag, make sure to also put in all juices from stewed tomatoes. Seal the foil bag and place dish in oven. Allow to cook for approximately 1-1.5 hours if using aluminum bags, 1.5 - 2 hours if using regular aluminum foil. Check at 1 hour with a fork for tenderness to judge how much longer it should cook. Serve over rice if desired.
