1 Quart dandelion blossoms-NO stems
4 1/2 cups sugar
4 cups water
1 pkg MCP( or plain pectin)
1 Tsp. lemon juice
Rinse blossoms; put in saucepan and add water.
Boil 5 minutes and strain. There should be about 3 1/2 cups "juice". If not, add water but press it through the blossoms, using a colander. Put "juice" into pot, add pectin and lemon juice. Bring to a boil; add suar.
Brong to a ROLLING boil, stirring all the while. Boil for 3 minutes. Ladle into hot, clean jars and seal with wax.
