Recipe: |
Pop 3/4 cup popcorn. Spray with Pam or coat with oil a large cookie sheet and spread popped corn on it and place in the oven at 250. Meanwhile, combine:
1 cup dark brown sugar
1 cup light/dark Karo syrup
2 Tablespoons olive oil or butter
Boil without stirring until thermometer reaches 255 degrees.
Remove from heat and stir in:
2 teaspoons vanilla
1 teaspoon salt
1 generous teaspoon baking soda
Stir quickly. Mixture will foam
Remove popcorn from oven and quickly pour mixture over it. Use Pam or oil coated spatula or wooden spoon to toss and stir.
Bake in oven app. 1 hour tossing about every 15 minutes.
Remove from oven and allow to set for a few minutes and then using spatula loosen from pan.
Absolutely delicious and a lot less expensive than Cracker Jacks and much tastier! Yields app. 1 gallon bag |
