Low Fat Chicken Creole
>
> 4 pieces skinless chicken breasts, cooked and cubed
> 1 C. onions, chopped
> 2 C. sliced mushrooms
> 1 Tbsp minced garlic
> 1 C. Celery, chopped
> 1 C. green pepper, chopped
> 2 tbsp Fresh Parsley
> Louisiana Cajun Seasoning to taste
> 1 15 oz can diced tomatoes
> 1 15 oz can tomato sauce
> 2 C. cooked rice
>
> Saute onion, celery, garlic and green pepper in
> large skillet. Add all ingredients to a large
> skillet except rice. Simmer slowly for 1 hour,
> stirring occasionally. Serve over rice. |
