Recipe: 1 1/2 cups graham cracker crumbs (regular or low-fat) 1/2 cup sugar (blue sugar sub. ok, but pink is too bitter) 1/3 cups melted butter (Brummel & Brown and I Can't Believe It's Not Butter work well, too) 1 (8 oz.) pkg cream cheese, softened (low fat ok, but fat free is too grainy) 3 1/2 cups plus 2 tbsps cold milk 1 (8 oz.) container whipped topping (low fat ok) 2 (4-serving) pkgs. pudding, any flavor (cook and serve or instant) Combine graham cracker crumbs, 1/4 cup sugar and melted butter. Press into 13- by 9-inch pan. Beat cream cheese with remaining 1/4 cup sugar and 2 tbsps. milk until smooth. Fold in half of the whipped topping. Spread over crumb mixture. Prepare pudding according to package directions except only use 3 1/2 cups milk total in pudding. Pour over cream cheese layer. Let stand in refrigerator overnight. Spread with remainder of whipped topping. For easier serving, dip butter knife in hot water and run it around the edges to loosen from sides of pan. This receipe works well with low fat or regular ingredients, and mixing the two is ok. Either way, get ready for the compliments!
