Italian Breaded Chicken W/Tomato Garlic Sauce

Recipe: This is my favorite dish I make it every time we have company but easy enough for everyday dinner too. You will love it. You will need: 2 cloves garlic 1/2 onion 5-6 small tomatoes 1 cube tomato chicken boulion (you can get this as walmart in the mexican food isle) 1-2lbs of boneless chicken breast or strips 3 eggs 3 cups Italian Style Bread Crumbs Olive or Vegtable oil (Olive gives a more italian flavor) Start by making the tomato garlic sauce. Take the first 4 ingredients and put them in a blender blend well but don't liquify. Put the sauce in a semi deep pan and put on low. Then prepare chicken by cutting into strips about 1 in wide and not very thick. Beat eggs in a bowl set aside. Put bread crumbs in another bowl set aside. Heat oil in a frying pan, enough to cover the bottom of the pan. Oil needs to be hot when cooking chicken. Dip chicken strips into egg then into bread crumbs then put into pan with oil and cook until golden brown then flip over and cook other side. You can cook more than one at a time I usually do 4 at a time. When they are golden brown transfer into tomato garlic sauce,turn up the heat on the tomato garlic sauce to med low so it can simmer the chicken. Contiue until all chicken is in the sauce then put a lid on the pan and simmer for about 10-15 min. Serve with your favorite rice receipe. I hope you like it!
