Recipe: This is fast, easy, cheap, and keeps the kids quiet and the big guy happy on movie night: Ingredients: 1 bag Nacho chips, we use the plain ones, whatever "shape" or flavor you want 1 can/bottle salsa or mexican style sauce cheese you have on hand: cheddar, montery jack, american, swiss, whatever, grate it all together in as big a pile as you want 1 small can presliced olives, drained pre-browned hamburger (optional) 1 can refried beans 1 small sliced/cubed tomato Pre heat oven to 350 Layer the chips in the bottom of a rectangular baking pan, glass is best, the pan can be as large or as small as you choose, (here, the larger the better) spoon the can of beans into little mounds here and there on top of the chips, next layer the hamburger (make sure you cook it first!!!), next pour the salsa on, as much or as little as you like , put the tomato slices/cubes on randomly, then pile on the cheeses, (lots and lots), sprinkle the olives on top. bake in oven until the cheeses are all melted and the beans are well heated through. Covering the pan with foil before putting it in the oven will result in a "softer" chip and non browning of the cheese and gets the job done faster. Do this if you like. Service is simple, put it on the coffee table with a pancake turner and plates, put down the napkins and get out of the way....there won't be any left, soon. Microwave version: same, microwave on high until cheeses are melted, make sure you cover the panwith plastic wrap, rotate if you have a non rotating microwave and be aware that the cheeses will melt quickly...
