Recipe: 2 cups (15oz) Ricotta Cheese 2 eggs , beaten 2 cups chopped fresh spinach or 10 0z frozen squeezed dry 1/2 tsp salt 1/4 tsp pepper 1/4 tsp nutmeg 1/4 tsp itialian seasoning or dried oregano 8 0z portabella mushrooms thinly sliced 4 cups marniara sauce 8 oz no cook lasagna noodles 2 cups mozzarella shredded 8 slices Provolone 1 cup parmesan cheese combine ricotta, eggs, spinich, salt, pepper, nutmeg, & Italian sasoning; set aside cook mushroom slices in non stick pan coated with cooking spray over medium heatuntil soft and lightly browned spoon 1-1/2 cups sauce into 13x9 pan top with half noodles and ricotta cheese mixture. top with mushrooms and 1 cup mozzarella then temaining noodles ,sauce,mozzarella,provolone,and parmesian cover with foil bake in 350 pre heated oven for 45 minutes remove foil bake an extra 15 minutes let stand 15 minutes befor serving --------------------------------------------------------------------------------
