Taco Pie (using ground beef) for Cinco De Mayo |

l lb ground beef 3/4 c. Bisquick
l/2 c. chopped onion 3 eggs
1 envelope taco seasoning mix 2 tomatoes, sliced
1 (4 oz.) can chopped green chillies, 1 cup shredded Monterey Jack or Cheddar
(drained) cheese
l l/4 c. milk
Grease 10 in. pie plate. Cook and stir ground beef and onion until brown. Drain. Stir in seasoning mix, spread in pie plate. top with chillies. Beat milk, baking mix and eggs until smooth. Pour into plate. Bake 25 minutes at 400 degrees.
Top with tomatoes and cheese. Bake until knife inserted in center comes out clean, about 8 to 10 minutes longer.
Cool 5 minutes. Serve with sour cream, chopped tomatoes, shredded lettuce, and shredded cheese.
