Mandarin Orange Salad |

Recipe: |
Dressing: 1/2 tsp salt; dash pepper; 2 Tbsp sugar; 2 Tbsp vinegar; 1/4 cup salad oil; dash red pepper sauce; 1 Tbsp chopped parsley. Combine & refrigerate until ready to serve, if not serving immediately.
Salad:
1/4 cup sliced almonds; 1 Tbsp + 1 tsp sugar (Cook over low heat, stirring until sugar melts & almonds are coated). Cool & break into small parts. Keep at room temp.
1/4 head romaine lettuce
1/4 head iceberg lettuce (OR any combination of choice). Torn into bite size.
1 Cup chopped celery
2 green onions, with tops, thinly sliced
Combine greens & place in a plastic bag & refrigerate if not serving immediately
5 minutes before serving, add dressing to bag & add
1 11oz. can drained mandarin oranges. Seal bag & shake til well coated. Add almonds & toss to enjoy. |
