1 box Jiffy cornbread mix
1 10 ounce pkg frozen chopped broccoli
3/4 cup cottage cheese
4 beaten eggs
1 tsp salt
1/2 cup butter (or margarine), melted
1 medium to small Vidalia onion, chopped
Mix together. Place in a 8" x 8" Pam sprayed pan and bake at 425 degrees for 45 min. Cool and cut. Serve. Makes about 9 pieces (depending on how large you cut pieces).
