1 small potato, peeled and boiled until mashable
peanut butter
1 lb confectioner sugar
Boil potato until it is mashable with no lumps add confectioners sugar until it forms a dough. Use rolling pin to roll out into a thin circle, spread peanut butter onto dough, roll up, then cut into pieces. Refrigerate for about an hr and serve cold. So easy, and so yummy. I usually make these around the holidays and kids love them.
Note: the larger the potato the more you will be able to make, but you will need to add more confectioners sugar if necessary. The potato (starch) is used as a binder so to speak for the dough to stiffen up. |
