5 cups cooked shredded chicken
2 tbs chilli powder
1 tbs cumin
3 tbs garlic powder
1 small can tomato sauce
2 cups water
salt and pepper to taste
1 dozen corn tortillas or ready made taco shells
lettuce,tomato,sour cream, shredded cheese,salsa all optional
This is a great substitution to the regular hambuger tacos! And it's inexpensive. You can buy a whole hen very cheap and boil until its done and shred or use chicken breast if they are on sale.
In a pot add first 6 ingrediants and stir. Cook over medium heat for about 10 minutes. We prefer homeade taco shells for this... Just fry corn tortillas in the shape of a taco shell, some times if I'm in a hurry or just being plan lazy I fry them flat like chalupa shells! But store bought ready made taco shells will work just fine. You could even use flour tortillas for soft chicken tacos.
After the chicken mixture has simmered, serve! I serve with rice and refried beans of course!
This is always a big hit at our house. It's a great thing to make for company, just add to the measurements as needed. You can cook the chicken and shredded the day before. |
