Arroz Con Pollo (Chicken and Rice) |

Serves 4 to 6
3 cups shredded chicken
3 cups of long cook white rice
5 1/2 cups water
1/4 cup oil
1/4 cup tomato sauce
1 small onion, chopped
3tbs chilli powder
1tbs cumin
2tbs garlic powder
2tbs salt
pepper to taste
1 pkg instant chicken broth or 1 cube chicken bouillon
1 fresh tomato sliced
Heat oil in large non stick pot, add onions, sweat(cook until tender but not brown). Add rice and saute (about 3 minutes), making sure not to burn. Add all seasoning and stir. Then add water,tomato sauce,and shredded chicken stir well. Top with fresh sliced tomatos. Cover and simmer for about 20 minutes or cook as rice as directed on back of package, until rice is tender.
Serve with refried beans, salsa, salad.
