Recipe: |
one pound of boneless breasts or thighs OR bone in chicken (breasts, thighs, drumsticks)
Preheat oven to 350 for boneless or bone-in chicken
1 cup catsup (Heinz has a spicy catsup that is wonderful with this)
2 TB mustard
1 TB Wocestershire sauce
1 TB brown sugar (light or dark)
1/2 cup water (more or less depending on thickness of sauce desired)
dash salt
dash pepper
optional: French fried onions
combine all ingredients except chicken. Mix well so as to have a smooth sauce
place chicken single layered in glass pan
pour BBQ sauce over chicken. Reserve some for after chicken is cooked
bake for 30-40 minutes for boneless or 40-50 minutes for bone-in
Chicken is done when juices run clear and/or internal temperature is 165 degrees
turn oven off. Spread the rest of the sauce over the chicken. If you are using French fried onions, place them over the sauce added and keep in warm oven until ready to serve. If you prefer crunchy onions, place onions on the chicken during the last 5 minutes of cooking. Then keep in turned off oven until ready to eat.
An excellent addition to this meal is corn muffins, especially sweet corn muffins.
