Peanut Butter Chicken

Recipe: About 2 lbs of chicken ( thigh meat, with our without bones) 1 cup of diced tomatoes 1 cup of diced onions Garlic to your liking 1 handful of cilantro 1 cup of fresh sliced okra 1/2 cup natural, unsalted, unsweetened peanut butter ( some stores sell this in the deli section) Olive oil, paprika, pepper and salt , juice of one lemon About 1/2 cup of water Start by seasoning your chicken using salt, pepper, paprika, garlic and lemon juice. You can do this the day before and put your chicken in the fridge until you're ready to cook your meal. Alternatively, you can begin my seasoning your chicken and cooking it once you are done with the other steps. Next, dice your veggies and set aside. Heat Olive oil in a pan, and add some garlic, the onions, and tomatoes. Cover for about 5 minutes or until onions are translucent. Next, add your chicken, stir and cover until chicken is fully cooked. On the side, mix the peanut butter with the water in a little bowl. Then add the mixture to the rest of the ingredients. At this point, you can add some more water if you need to. Let it cook for about 10 to 15 minutes on medium heat. Add your okra and cilantro. Taste for salt (if you like hot peppers, you can add some as well) . Once the okra is cooked to your desired firmness, your meal is ready to be enjoyed. Serve over white rice. This is in African recipe, but I'm not sure which country.
