Recipe: |
1.5 pounds white potato, 1/2 cucumber, 1 small-med green bell pepper, 4 green onions, 1 large tomato or 2 small-med ones, cilantro (to your desire). DRESSING: 1/3 cup oil (I use less than that), 2 tablespoon cilantro, 3 tablespoons white wine vinegar, 1/4-1/2 teaspoon salt, 1/4 teaspoon ground cumin, dash (or to your liking) ground cayenne pepper. |
