Three Cheese Zucchini Lasagna roll ups |

8 lasagna noodles: cooked and dried off
1 tsp olive oil
3 garlic cloves, crushed
2 medium zucchini , grated and squeezed dried
1/2 cup Parmesan cheese
1 large egg: beaten
1/2 tsp kosher salt
Pepper
1 3/4 cup Marinara sauce, I like Newmans
1/2 cup part skim mozzarella cheese, shredded
Preheat oven 350
Ladle 1 cup Marinara sauce in a 9 x 13 inch baking dish
Saute garlic and olive oil in medium non stick skillet over medium heat for 1 min, add zucchini, salt and pepper to taste and cook 4-5 min.
Medium bowl mix together the zucchini, ricotta, Parmesan, egg, salt and pepper.
Lay noodles on a clean surface, make sure they are dry
Take 1/3 cup of ricotta mixture and spread evenly over the noodle.
Carefully roll and place seam side down in dish. Repeat with remaining noodles.
Ladle remaining sauce over lasagna rolls and top each with 1 tbsp mozzarella cheese.
Put foil and bake 40 minutes
