1 lb. boneless chicken breasts
1 C. sliced mushrooms
1 red pepper, cut to one inch pieces
1 tomato, diced
1/2 small onion, diced
1/2 C. White wine
feta cheese crumbled
lemon juice
salt and pepper
Spray baking dish with cooking spray. Place chicken breasts in pan and top with next 4 ingredients. Pour wine over (or use chicken broth) and then add lemon juice to taste - 2-3 TBL. Sprinkle top with feta cheese.
Bake uncovered at 350 degrees for 30 minutes to till chicken is no longer pink. Serve over couscous or rice. Garnish with more feta and lemon slices, if desired. |
