Using leftover or fresh rotisserie chicken, pull meat from bones, shred and add to medium mixing bowl. Depending on how much meat you have left (I always nibble as I make this), add about 1 Tbsp mayo, 2 tsp Miracle Whip, 1 - 2 tsp curry powder, 1 Tbsp drained, crushed pineapple (or sub with sweet relish), salt & pepper, to taste. I know, pineapple sounds strange, but it is delicious with the curry. You can add more or less mayo and/or Miracle Whip, to taste & desired consistency. Mix all together and I love to serve it on toasted 12-grain bread. Enjoy! |
