Almond-Crusted Pork Tenderlions

Recipe: Almond Crusted Pork tenderloin strips With Honey Mustard Sauce 1 lb. Pork tenderloin, trimmed and cut diagonally into 1/2-inch thick slices. 1 cup coarse dry whole-wheat bread crumbs, ¾ cup sliced toasted almonds 1 tsp garlic powder ½ tsp lawry seasoning salt ¼ tsp coarsely freshly ground pepper 1 large egg white beaten Preheat oven to 425 F. Set a wire rack on a baking sheet and coat it with cooking spray. Place breadcrumbs, Almonds, garlic powder,lawry salt and pepper in a food processor or blender,Pulse until almonds are coarsely chopped. Transfer mixture to a shallow dish. Place egg whites in another shallow dish. Dip both sides of each pork strip in egg white, then evenly coat with the almond breadcrumb mixture. Place pork strips on prepared rack and coat both sides with cooking spray. Bake pork until golden brown and no pink in the center, 16 to 18 minutes Serve the pork tenderlions with honey digon mustard of your choice.
