Recipe: Prep Time 30 minutes Cook time 25 Minutes ½ cup unsalted butter, slightly softened 2 ½ cups sugar 1 ¼ cups All-Purpose Flour 1 cup Pecan Pieces 1 tsp. Vanilla Extract 4 lemons,juiced 4 large eggs 1 tsp baking powder Preheat oven 350 F. Spray a 9x13 inch pan with cooking spray. In a large bowl cream together butter and ½ cup sugar. Add 1 cup flour, pecans, and vanilla; mix well. Press mixture into baking pan and bake for 10-15 minutes, or until golden brown. In a medium bowl mix together lemon juice, 2 cups sugar, ¼ cup flour, eggs, and baking powder. Pour lemon batter over crust and place in oven. Bake lemon squares 25 to 30 minutes, or until squares are set and start to turn brown. Serves 24
