Recipe: Prep Time 15 minutes Chill Time 1 1/2 hours 1 cup orange juice 1 envelope (7 grams) unflavored Gelatin 1 jar (7.oz) Marshmallow crème 1 cup mini marshmallows 1 can (11.oz Mandarin Orange Slices, drained 1 graham cracker pie crust 1/2 cup whipped topping 1/2 cup toasted chopped pecan pieces Combine 1/2 cup orange juice and the unflavored gelatin in a small microwave safe bowl. Heat the gelatin in the microwave oven on high power for 1 minute. Add the remaining orange juice to the mixture. Combine the marshmallow crème and the unflavored gelatin in a large bowl and beat with an electric mixer on medium. heat about 5 minutes. Gently stir in the mini marshmallows and 3/4 cup drained Mandarin orange slices. Save 8 slices to garnish pie. Chill mixture in the refrigerator for 30 minutes until it begins to thicken. Spoon the thickening orange mixture into the graham cracker crust and top with the whipped topping and orange slices. Sprinkle with toasted chopped pecans pieces Chill the pie for 1 hour or until ready to serve. Makes 8 slices.
