1 lb. chicken breasts (diced, and cooked up); salt and pepper to taste; 1/2 onion (thinly sliced, cooked until translucent); 1/2 green pepper (thinly sliced, cooked); 1/2 red pepper (thinly sliced, cooked); 8 Romaine lettuce leaves, pulled apart; 1 cup cooked rice (any variety). Once the chicken, veggies and onion have been cooked lay out Romaine lettuce leaves and spoon in 2 tablespoons of rice, then add 1-2 tablespoons of the chicken/veggie mix into each leaf. |
