Ingredients:
1 dozen eggs
1 package of medium to large tortillas
1 cup cheese
salt/pepper to taste
Cooked breakfast meat of choice (ham, sausage, etc.).
Crack all eggs into a bowl and whisk; add cheese, salt/pepper, cooked breakfast meat of choice, and cheese and stir. Spray deep frying pan, once pan is hot pour entire contents in, stir every ten seconds. Lay out tortillas and add one scoop of mixture into each tortilla, folding up. Great for freezing ahead of time, just wrap in tin foil and place in freezer. |
