Pumpkin Delight Name: Toni Davis Base: Hickam AFB Recipe: 1-29 ounce can pumpkin 3 eggs 1/2 cup packed brown sugar 1/2 cup white sugar 1-12 ounce can evap. milk 1 1/2 teas. cinnamon 1 box cake mix (your choice...spice, carrot, yellow) 1/2 cup chopped pecans 1/2 cup melted butter Preheat oven to 350 degrees. Grease a 13/9 inch baking pan. In large mixing bowl combine all ingredients except the last 3 (cake mix, nuts, and butter). Pour into the pan. Sprinkle the cake mix evenly over all. Top with the nuts, then the melted butter. Bake for 50-60 minutes until lightly browned. Serve with whipped cream or ice cream.
