Recipe: Ingredients: 1/2 cup unsalted butter 1 cup sugar 1/4 cup dark brown sugar 1 egg 1 can (15 oz.) Veg-All Original Mixed Vegetables, drained and pureed 2 cups all-purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. nutmeg 1/2 tsp. salt 1 1/4 cups quick cooking oatmeal 1 cup butterscotch chips 1 cup chopped pecans Directions Preheat oven to 350° F. In large mixing bowl, cream together butter, sugar, and brown sugar. Add egg and Veg-All and mix until smooth. Add flour, baking powder, baking soda, cinnamon, nutmeg, and salt; stir with a spoon until combined. Stir in oatmeal, butterscotch chips, and pecans. Using a large tablespoon, drop dough onto parchment paper-lined cookie sheets and flatten slightly with back of spoon. Bake for 17 to 20 minutes or until lightly browned. Cool before storing.
