Stuffed Chicken
2 pounds chicken breasts (four breasts)
3 cups savory stuffing
1/4 cup green bell pepper
1/4 cup red bell pepper
1/4 cup yellow squash
1/4 cup green zucchini
1/2 cup Parmesan cheese
3/4 cup honey mustard raspberry sauce (or your favorite)
Take the chicken breasts and make a slit 3/4 of the way in through the side. Prepare your stuffing and saute your vegetables. Mix together. Add two tablespoons sauce. Stir together well. Stuff the chicken with the mixture. Take one tablespoon sauce and drizzle over the stuffing, then sprinkle a pinch of cheese over the top. Repeat on the other three breasts. Then use leftover sauce and drizzle of all the chicken. Finally sprinkle the rest of the cheese over the sauced chicken. Bake at *375 for 35 minutes. Let sit for three minutes, then dig in and enjoy~! Absolutely yummy!~ |
