l lb extra-lean ground beef
1 can (14 1/2 oz) beef broth
1 can (10 oz) diced tomatoes and green chiles, undrained
1 each lg green bell pepper and yellow bell pepper, thinly
sliced, then halved
2 cups instant rice, uncooked
1 1/2 cups shredded colby & monterey jack cheese
Brown meat in large skillet. Stir in broth and tomoates and bring to boil.
Add peppers and uncooked rice, stir. Cover, simmer on low heat 5 mins or until rice is tender.
Top with cheese, let cheese melt on top with covered lid for about 10 mins
