1/2 med onion, diced
6-8 slices bacon, chopped into small pieces
2 T oil
1 bag dried black eyed peas
4 c water
1 T sugar
1 T cajun seasoning
salt and pepper
Soak and rinse beans overnight in water. Drain and rinse.
In a 3 quart saucepan, saute onion and bacon in oil. Add peas and water. Add sugar, salt and pepper to taste, and cajun seasoning. Bring to a boil. Reduce heat to med-low and cook until peas are tender...about 1 1/2 hours. As peas cook, more boiling water may need to be added as the water reduced. |
