Coconut Shrimp Alfredo

Recipe: This meal uses only four main ingredients and all can be purchased at your local commissary! It's quick and easy and also lactose-free! Recipe is based on 4 servings: -12 oz pack of frozen shrimp (about 48 medium shrimp) -your favorite pasta (I like to use bowtie!) -1 cup coconut milk (shake well before measuring) -1/2 cup coarsely shredded parmesan cheese -salt & pepper to taste **add a pinch of cayenne pepper to give some warmth -1/8 tsp garlic powder -1/2 tsp dried parsley Cook pasta per box instructions (sauce doesn't take long). Heat coconut milk on med-hi heat in a small sauce pan. Heat until it starts to froth and almost boil (even simmer a bit). Mix in the spices. Remove pan from heat and add parmesan -swirl to melt, give a good stir! Cook shrimp in separate pan just until pink (about 2 min). Add shrimp to sauce and serve over pasta! Voila!
