Vineyard Chicken Grilled Burgers

Recipe: 1 small chopped yellow or red onion or a few scallions 1/4 cup finely chopped celery 1 Granny Smith apple, peeled and diced 2 pounds ground chicken Few pinches of salt Few pinches of black pepper 1 tsp. Tabasco chipotle pepper sauce A few squeezes of lemon or Pinch of grated lemon zest 1/2 tsp parsley Directions: In the food processor chop onion/scallions, celery and apple. Place the ground chicken in a large mixing bowl. Add chopped items and the remaining ingredients. Shape into eight burgers. Place on grill; cook each side for 7 minutes until meat is thoroughly cooked. At no time should you press down on them, this will allow the juices to run out and the burger to dry out. After removing from the grill let sit for 2 to 3 minutes for juicy burgers. Serve with tomato, avocado, feta cheese on your favorite toasted bread , pita, ciabatta roll or for a healthier alternative leave out the bread and serve on a bed of lettuce.
