Zucchini Beef Casserole

Recipe: 2 pounds zucchini, sliced into about 1/4 inch rounds 1 pound of ground beef 2 cups cottage cheese 1-1/2 cups schredded cheese 1 can of cream of mushroom soup 1 medieum onion, chopped 1-1/3 cups instant rice 1 tsp garlic salt 1 tsp ground oregano 1. Saute beef with onion until lightly browned. 2. Add rice and seasonings. 3. Place half of the sliced zucchini in bottom of 9 X 13 greased pan. 4. Cover with beef/seasoning mixture. 5. Spoon the cottoge cheese over the top. 6. Add the remaining half of the sliced zucchini. 7. pour can of cream of mushroom soup over all. 8. Sprinkle 1-1/2 cups shredded chees over the top. 9. Bake uncovered in 350 degree oven 35-40 minutes until bubbling hot. 10 Enjoy, serves ten (10).
