Breakfast Ham & Potato Pie

Recipe: 2 Large Eggs Beaten 4 T. Flour 4 green onions chopped (Optional) Can use purple onion 1 1/2 C. Thick Sliced Ham - Chopped (can use Ham Lunchmeat) 1 C. Shredded Mozzarella Cheese (I used Weight Watcher's) 1/2 C. Grated Parmesan Cheese Salt & Pepper to taste 2 - 3 T. Butter 20 OZ -Shredded Hash Brown Potatoes (thawed & drained) Fresh Parsley or Chives Chopped to garnish (Optional) Cherry tomatoes cut into half (optional) Mix ingredients in large bowl. Spray pie pan with Pam, or grease with butter. Pour ingredients from bowl and tap/press with spoon or fork into pie pan. Dot with Butter pieces. Bake 400 until golden brown, about 30 Min. Cool 5 Min and top with chives & cherry tomato pieces. Serves 6 to 8 people.
