Black Beans & Rice w/ Sausage

Recipe: This is a great recipe that my mom has made for years! It is tasty, simple, and inexpensive! Enjoy! You will need: -1 lb sausage, such as Hillshire Farms Kielbasa or smoked sausage -one can black beans (undrained) -one can diced tomatoes (undrained) -1/2 onion, chopped -2-3 fresh garlic cloves, minced -cajun seasonings, (or substitute your favorite spices) -3 cups cooked rice Begin by starting your rice so that it can be cooking while you prepare the sausage & black beans. Heat your skillet over medium heat and add a bit of olive oil to the pan. Slice your sausage into bite sized chunks and toss into pan, cook for 2 minutes, then add in your chopped onions and minced garlic. Sautee sausage & onions for 2-3 more minutes. Add in can of tomatoes, then can of black beans. Stir to combine. Sprinkle in cajun seasoning, and/or any other seasoning you like until it tastes just right. Cover and let simmer on low heat until your rice is done. Serve over rice and enjoy!
