Chicken Parm with homemade sauce |

Ingredients:
Organic Boneless skinless chicken Breast
Bread crumbs
1 Egg
Flour
Sauce:
1 can crushed tomatoes
1 can diced tomatoes
1 chopped onion
2 cloves garlic
onion powder
garlic powder
basil
oregano
couple bay leaves
salt pepper
sugar
Directions:
Make sauce early in the morning so it can low simmer all day. Saute the onion and garlic in tbs of olive oil. Once lightly brown add tomatoes. Then mix the above spices together, taste and add more if necessary. (I don't go by precise measurements for this). Allow to simmer on low stirring occasionally.
Chicken:
Set up 3 dishes. Beat 1-2 eggs in one dish, flour in the second and breadcrumbs in the third. Dip the cleaned chicken in the flour, then egg and coat with breadcrumbs.
I heat canola oil and fry the chicken or you can bake it in the oven at 400F for about 30-40 mins till no longer pink.
Once the chicken is cooked top with some sauce and mozzarella cheese. Place in oven under the broiler till the cheese is melted and lightly brown.
Serve with spaghetti and the rest of the sauce!
