Easy Cheesy Mexican Lasagna |

I lb lean ground beef or you can use 1 lb ground turkey
10 tortilla's warmed in microwave (We like the wheat ones)
2 cans enchilala sauce mild or hot
1 finely chopped yellow or white onion
1 finely chopped green pepper
1 12 bag shredded cheddar or pepper jack cheese
1 can water
Brown ground beef or turkey in skillet. Drain well and add 1 can of enchilala sauce, water and onion and green pepper.
Stir well. Warm tortillas in microwave for one minute placing a wet paper towel over the tortilla's.
Place warmed tortillas in a greased 9 X 12 inch baking dish. I use a cake pan. Add meat mixture and sprinkle with shredded cheese and remaining can of enchilala sauce.
Bake at 350 until cheese melts and is bubbly! About 15 minutes.
Enjoy with a side salad or fruit |
