Best White Fish Ever

Recipe: 1 lb White Fish such as Flounder, Whiteing or Tilipia. 1/2 cup plain greek yogurt (this is best but can use mayo also) 2 tsp garlic powder or 3 cloves fresh, chopped. 1 tsp dill weed 1 tsp ground pepper 1 T lemon juice Pat fish dry. Mix the rest of the ingrediants together. Spread the mix on the fish with the back of a spoon. Insure each piece is well coated. Allow to set for up to 30 minutes on a rack. Grill over hot coals on a rack. Cook on one side for 3 minutes. Turn only once. Cook for 3 more minutes. Remove from heat to a warm platter and serve. This is a healthy fast meal. Allowing the fish to set for 30 minutes on a rack keeps the meat dry and allows the flavors to blend well. Not adding salt until after cooking white fish keeps it moist. Any spice blend works well. Using lemon pepper and garlic is great also! Or 2 T of any powdered dressing mix.
