Migas (Breakfast Casserole)

Recipe: 1/2 cup butter 1/2 cup onion, chopped 6 flour tortillas broken and fried crisp 1/2 cup tomatoes, chopped 8 eggs, slightly beaten 1/3 cup hot sauce grated cheddar or Monterey Jack cheese Heat butter and saute onion. Add fried tortillas and tomatoes. Evenly distribute in skillet. Pour eggs and hot sauce. Scramble eggs over medium low heat. Garnish with cheese.
