Quick and Easy Healthy Ground Turkey Stroganoff

Recipe: 1 lb. ground turkey or lean ground beef 1 can of condensed Cream of Mushroom soup (do not add milk) 1 can of condensed Cream of Chicken soup (do not add milk) 1 cup of lite Sour Cream 12 oz noodles of your choice, or if you're like my family, we like rice, so I use cooked rice instead (about 3 cups).* Boil the noodles until al dente and set aside. In a large skillet, brown the ground turkey on med-high heat until no longer pink. Lower the heat to med-low and stir in the Cream of Mushroom and Cream of Chicken. Keep stirring until everything is incorporated well. Turn the heat to low, and add the sour cream. Stir well and continue to stir until everything is heated through. Do not let the stroganoff come to a boil or the dairy will separate and/or burn. Spoon over cooked noodles or rice and enjoy! This will serve 4 easily and up to 6 with a nice green salad and garlic bread on the side. *I cook the rice in a rice cooker, but you can also cook the rice in a pot on the stove top. Add as much water as you have rice (3 cups of rice=3 cups of cold water) into a pot (with at least 4 inches of space above the water) with a lid. Bring the water and rice to a boil and then turn the heat down to low. Let the rice simmer for approximately 15 min. or until the water is completely absorbed by the rice. Turn off the heat when done. Let it sit for about 5 minutes. Then fluff the rice with a fork.
