2 chicken breasts (thawed completley)
10 saltine crackers (crushed fine)
2 tsp. intant potato flakes
2 tsp. flour
1/4 tsp. seasoned salt
dash of pepper.
1 egg (well beaten) or 1/4 c. egg beaters (well beaten)
Crush crackers and add potato flakes, flour, seasoned salt and pepper. Place on plate.
On another plate, pour liguid egg.
Dip chicken breast in egg and drench in cracker mixture, coating both sides and ends.
Fry in hot oil for 20-25 minutes (or until chicken is done)
Serve with side dish (such as baked potato) and vegetable.
