Kids love this cheesy twist to zucchini:
2 large zucchini
8 oz colby longhorn cheese, shredded
1 cup frozen corn
salt, pepper to taste
Wash, peel, slice zucchini, put in large skillet
cook zucchini in 2 tbl water until a bit translucent
add frozen corn, cover
when corn is hot add shredded cheese, cover
when cheese is melted, serve and season |
