Recipe: |
1 3-4lb pork roast(end roast bone in)
2 cans of cannellini beans or great white northern beans
4 or 5 cloves of garlic (whole)
salt to taste
pepper to taste
put pork roast in roasting pan and coat with salt and pepper.
tent with aluminum foil
put in preheated oven at 350 degrees for 40 minutes per lb.
take aluminum foil off the last 45 minutes and add garlic cloves and 2 cans of canellini or great white northern beans
return to oven ( uncovered) for last 45 minutes.
pork should pull apart easily.
serve with beans spooned over top of pork.
salad with olive oil and wine vinegar is a great accompaniment.
