Slice a good baguette into 1/2" slices. Brush with olive oil and broil until lightly brown. Meanwhile, dice plum tomatoes and place in a medium bowl. Add a splash of balsamic vinegar, a splash of olive oil, 2-3 cloves of minced garlic, and salt & pepper to taste.
Spoon the tomato mixture onto the baguette slices. Garnish with fresh basil cut into ribbons. |
