Chick-Mex Ramen casserole

Recipe: 2 packs of Ramen Noodles(I use creamy chicken) 1 ramen seasoning packet 1 envelope ranch seasoning 2 cups shredded cheese (I use pepper jack and cheddar) divided in half 1 small can diced green chilies 1 can of chicken or 1 cup leftover diced chicken 1 small can diced olives (optional) 1 cup sour cream 3/4 cup crushed corn chips (I use fritos) Grease 8X8 dish and heat oven to 400* Cook noodles and drain Rinse noodles in cold water Mix ranch, ramen seasoning and sour cream Stir together noodles, chicken, chilies, olives, 1 cup of cheese, and sour cream mixture. Place into greased 8X8 pan and top with remaining 1 cup of cheese and crushed chips Bake for 20 minutes or until cheese is bubbly and starts to brown. Serve and enjoy!
