1 lb (1 box) garden rotini pasta
1 lb fresh mozzarella cheese, diced
1 lb pepperoni, diced
2 bell peppers, any color, diced
1 red onion, diced
1 small can tomato paste
Olive oil, to taste
Red wine vinegar, to taste
Balsamic vinegar, to taste
Salt and pepper
Boil noodles to al dente, about 8-9 minutes. Drain and set aside. Dice all vegetables, cheese, and pepperoni. Mix tomato paste, vinegars, olive oil, and salt and pepper into noodles. Be sure to coat all the noodles and mix evenly. Add all other ingredients and stir. Serve immediately, hot or cold. Leftovers keep amazing in the fridge for about 5 days.
