Chicken Soup Latin Style

Recipe: •1 tablespoon vegetable oil •3 garlic cloves, chopped •3 medium carrots, chopped •3 medium celery stalks , chopped •1 medium onion, chopped •1 tablespoon chili powder •1 teaspoon ground cumin •1 carton(32 ounces/4 cups) •2.5 cup water •1 cup of fresh corn kernels or 1/2 can •2 tablespoons fresh lime juice •6 chicken drumsticks (or any chicken you like) •1/2 cup loosely packed fresh cilantro leaves, chopped •1 tomato, cut into 1/2-inch pieces •1 ripe medium avocado, cut into 1/2-inch pieces 1. Heat oil over low heat until hot in a 6 quart saucepot. Add the garlic, carrots, celery, onion and chili poweder, and cook, covered, for about 10 minutes or until vegetables are tender, stirring frequently. 2. Add cumin and cook 30 seconds, stirring. Then add broth and water to vegetable mixture; cover saucepot and heat to boiling over high heat. 3.Stir corn kernels, lime juice, chicken pieces, and chopped cilantro into broth mixture in saucepot; heat to boiling over high heat. Remove saucepot from heat; stir in chopped tomatoes. 4.Let the chicken boil in the soup mixutre for about 50 minutes then bring it down to a low heat and let it marinate for about 20 minutes and then serve!
