2 pounds Zucchini, cut into 1/4 inch rounds
1 pound ground beef
2 cups cottage cheese
1-1/2 cups shredded cheddar cheese
1 can cream of mushroom soup
1 medium onion, chopped
1-1/3 cups instant rice
1 tsp garlic salt
1 tsp ground oregano
1. Saute beef with chopped onion until lightly browned.
2. Add rice and seasonings
3. Place half of the sliced zucchini in bottom of 9 x 13, lightly greased.
4. Cover with cooked beef/seasoning mixture.
5. Spoon the cottage cheese over the top of beef/seasoning mixture.
6. Add remaining zucchini.
7. Pour can of cream of mushroom soup over all.
8. Sprinkle 1-1/2 cup shredded cheddar cheese over top.
9. Bake uncovere in 350 degree oven 35-40 minutes.
